Best Chocolate Mousse Recipe
Here is the simplest chocolate mousse recipe Ashley has and it's also the best!
This recipe makes one small water glass of mousse but it tastes so rich that it's enough for one person, so all you need to do is times the recipe by the number of guests you have.
1oz dark 70% chocolate
1 level tea spoon caster sugar
1 tablespoon double cream
Melt the chocolate but don't let it get hot.
Separate the egg and whisk the white with the sugar to a firm peaks.
Add the yolk to the chocolate and mix, don't worry if it goes a little firm.
Mix a third of the whisked egg white in to the chocolate and yolk mix, this is more to loosen the mix than adding air.
Gently fold in the rest of the egg white until you have a smooth mix, don't be to obsessive as you'll knock out all the air!
Poor in to glasses, place in fridge for two hours.
Serve with a layer of double cream and enjoy.
